The awards ceremony of the First Chinese Gold Medal Tourism Snack Food was held in Beijing on November 18, 2016. A total of 200 kinds of gold medal tourism snacks were selected. Among them, 8 kinds of Shaanxi snacks were listed. Li Jinzao, Head of the National Tourism Administration attended the ceremony and presented awards to the representatives. Xi’an Fan's Pancakes Cured Meat

Fan's Pancakes Cured Meat was founded during the Emperor Guangxu Years (1904) of the late Qing Dynasty, with more than one hundred years of history. Since the founder, Fan Bingren accidentally got the secret recipe from the imperial kitchen of Dowager Empress Cixi, the three gerations of Fan family kept on improving the ancestral secret recipe and production process of wax juice meat, formed a unique flavor, and become preeminentin the birthplace of the wax juice meat in Xi’an.

Xi'an Jia San Halal Soup Dumplings

The world famous Jia San Halal Soup Dumplings was founded by Hui people Jia San (Jia Zhiliang), which is known as the special Muslim food in ancient city of Xi'an. Jia San Steamed Stuffed Buns are very fastidious, skinned with craft white flour, filled with Qinchuan beef, matched with beef marrow broth, produced by special techniques, and steamed in the small basket on strong fire. The dipping sauce and vinegar materials need to be processed again to make the steamed stuffed bun match with the dipping sauce.

“Gourd Head Bread in the Soup", is a unique traditional flavor cuisine in Xi’an. Xianyang Sanyuan Lao Huang’s Bubble Oil Cake

The Bubble Oil Cakeis a famous traditional snacks of the Han nationality in Sanyuan County of Shaanxi Province, whose origin can be traced back to the Tang Dynasty feast snack "see the wind away" oil cake. The stuffing is made of sugar, Huang Gui, rose, peach kernel, cooked noodles and the powder is superior wheat flour cooked in boiling water and lard.

The Sanyuan Lao Huang’s Bubble Oil Cake used the water steamed flour, lard, Huang Gui, white sugar etc. as the raw material. The bubble oil cake is white, skin fleeciness, like fine gauze woven or the cicada. The cake surface has uplifted bubble, so it was named the bubble oil cake.

Baoji Qishan one hundred year old Meiyang Noodles with Ingredients

What do the Shaanxi inhabitants love to eat? That must be the noodles! When we talk about the Baoji noodles, the Qishan Noodles with Ingredients is very special. Yulin Mutton Saozi Buckwheat Noodle

Yulin Mutton Saozi Buckwheat Noodle is one of the traditional food of Yulin in Shaanxi Province, and is one of the three special noodles in North China, which is equally famous as the Lanzhou Stretched Noodles, Shanxi Sliced Noodles. The Yulin people are proud of the mutton Saozi buckwheat noodle. Almost all the guests to Yulin will be treated with this noodle.

He Le, called “He Lou" in the past. The Yulin mutton noodle uses a special foil machine tool to crush the buckwheat into fine and long article cone noodle, to scoop into the bowl, then pour into many kinds of spices mutton soup, therefore it was called  mutton noodle.

Yaozhou Salty Noodles Soup

The salty noodles soup is "toughening and long, with light salty sweet amber coloured soup”. It is the food representative of the Yaozhou Food, and is the heritage and witness of deep history and culture of Tongchuan, Shaanxi. In the eyes of the Yaozhou locals, the one thousand-year old Yaozhou City was built on a bowl of salted noodles soup.

The salty noodle soup has three secrets: First is the soup, second is the flour and the third is the seasoning. The salty noodles soup is specialised in the soup, which usually contains a dozen of spices such as the clove, star anise, cinnamon, longan, ginger, bay leaves, small sweet, angelica sinensis. These ingredients are also Chinese herbal medicine, which have the effect of regulating and strengthening our body. For the flour, it is by adding a moderate amount of caustic soda repeatedly rub up and pull into wide or narrow noodles. Then to cool off the noodles after cooking and mix with fried soup for a few times. Afterwards, to pour the primitive soup after the diathermy.
